Pengaruh Metode Pengolahan Terhadap Kadar Air, Kadar Abu, dan Kandungan Vitamin C Daun Kelor (Moringa Oleifera)

Abstrak

Tanaman kelor (Moringa oleifera) merupakan spesies tanaman tropis yang tumbuh hampir diseluruh wilayah Sulawesi Tenggara. Tujuan penelitian ini yaitu untuk mengetahui pengaruh  metode pengolahan terhadap nilai kadar air, kadar bau dan vitamin C daun kelor. Penelitian ini menggunakan metode pengamatan langsung pada penerapan beberapa teknologi  pengolahan yang berbeda terhadap kualitas daun kelor. Hasil penelitian menunjukkan kadar air pada daun kelor segar yaitu 74,2 %. Kadar air mengalami penurunan signifikan pada daun kelor yang mengalami proses perlakuan pengeringan dan perlakuan blanshing+pengeringan yaitu 6,71% dan 13,23% namun dilain sisi proses perebusan menyebabkan peningkatan kadar air menjadi 83,46%. Selain itu, proses perlakuan pengeringan dan perlakuan blanshing+pengeringan juga menyebabkan menurunnya kadar vitamin C pada daun kelor yaitu 8,29% dan 29,25% berturut-turut. Secara keseluruhan semua perlakuan mampu meningkatkan kadar abu daun kelor yang dihasilkan.
